Ingredients

    1 cup broccoli

  • 3

    2-3 large carrots

  • 4

    3 cups quinoa cooked according to package directions

  • 5

    1 tsp. olive oil

  • 6

    1/2 cup almonds

  • 7

    1/2 tsp. Sesame seeds

  • 8

    1/4 cup soy sauce

  • 9

    1/4 cup hoisin sauce

Directions

Chicken Entrees

    Preheat oven to 375 degrees. Prepare Sandra's Chicken, Broccoli & Swiss according to package directions

    After chicken is fully cooked, allow to cool slightly. Carefully cut into 1/2-inch slices

Grain Bowl Assembly

    Blanch broccoli for 2-3 minutes in boiling water. Remove and place into an ice bath to cool

    Peel and julienne carrots into matchsticks

    Drizzle olive oil over almonds in a small pan and bake at 375 degrees for 10 minutes.

    In a small bowl, mix soy sauce, sesame seeds & hoisin sauce.

    Assemble the bowls: Place 1-1.5 cups cooked quinoa into each bowl. Top with half of the blanched broccoli, half of the carrots and half of the roasted almonds in each bowl. Top each bowl with the chicken entrée slices, then drizzle with sauce (or serve sauce on the side).
